Step 1: Bake the Fries
Preheat your oven to 425°F (220°C).
Spread the frozen French fries on a rimmed baking sheet in a single layer. Bake according to package instructions (usually about 25-30 minutes), stirring halfway through for even cooking.
Step 2: Prepare the Cheese Sauce (Optional)
In a small saucepan, melt 2 tablespoons of butter over medium heat.
Whisk in 2 tablespoons of all-purpose flour and cook for about one minute.
Gradually add in 2 cups of milk while whisking continuously until the mixture thickens slightly.
Remove from heat and stir in 16 ounces of processed cheese (like Velveeta) until melted and smooth. Season with salt and pepper to taste.
Step 3: Assemble the Loaded Fries
Once the fries are crispy, remove them from the oven and turn on the broiler.
Layer the fries on a baking sheet or oven-safe dish. Drizzle with cheese sauce (if using) or sprinkle shredded cheddar cheese evenly over the fries.
Top with crumbled bacon and the whites of the green onions.
Broil for an additional 2-3 minutes until the cheese is melted and bubbly.

Remove from the oven and garnish with sour cream, chopped green onion tops, and any additional toppings like jalapeños or ranch dressing.
